Under Preferences —> Resize could we get an option to default to “Zoom To Fit” the image? I swear this was the default in older versions but now I have to manually switch to it every time.

Yes! The first step I always do is Zoom To Fit. I just want to first have an overview of the whole and choose some part of the photo to improve. I can then enlarge it, etc.
I like your idea. Like another poster in this thread, I like to get the overall sense of an image before zooming in (or, out).
