Update choices

Using iMac19 with Intel so know there are limitations on versions. However, in an attempt to update even within the current version (v6) perhaps from 6.0 to 6.1, there does not seem to be an option - I can only select “Update” and that point updates are downloaded with no way to select which and then a prompt to “Install update”. What does one do to be more specific on which updates they want to select and try?
