The priority of the process can be set in the preferences. Normal, below normal, above normal.

on win10/11 and macOS - does this priority work?

I’m using Win11, it should work theoretically.

Priority management - base functionality of any Windows or Unix kernels and works fine without any doubt. Can’t promise it on MacOS as Linux kernel may be modified for Apple reasons.
Other question - modern OSes requires administrative privileges for rising priority of user process.
